Mustard seed are an important spice in many regional foods. They can be yellowish-white or black in color, as they can come from two different kinds of plants: Brassica nigra, B. Juncea, and and Sinapsis alba. The whole seeds are often used for pickling and boiling vegetables like cabbage or sauerkraut. They also enhance flavoring of fish and poultry.
