Sage is the dried leaves of Salvia officinalis. The oblong shaped, silvery-gray leaves are grown in Albania and have a strong aroma and slightly peppery flavor. The most popular use for ground sage is making pork sausage. It is also the predominant herb in Poultry seasoning and is often used to flavor sauces and gravies.
