Fennel is the dried, ripe fruit of Foeniculum vulgare. Its oval shaped, yellow-brown seeds have a sweet licorice-like aroma and flavor. It originates in Turkey, Egypt, India, and China. It is a common ingredient in Northern European breads and Italian sausage and meatballs.
